Healthy Salmon Salad
This is phenomenal and so easy!
Healthy Salmon Salad
prep in advance:
1 lb Atlantic salmon, broiled or poached and cooled
1/2 cup steamed broccoli, cooled
vinaigrette
2 tbsp pickle juice
2 tbsp lemon juice
1 tsp lemon zest
1 tbsp capers
optional: 1 tbsp light mayo or yogurt
2 green onions, chopped
2 celery stalks, chopped
salt and pepper to taste
Mash salmon up and add to vinaigrette and chopped veggies. Serve on a bed of greens or in a whole wheat pita pocket. For a twist, you can add a dash or curry powder on top.
